Potash / Potassium Carbonate
Used as leavening agent with typical taste especially to the relaxation by such dough which has a high sugar contingent and is processed as a level cake (e.g., honey cake dough). One lets these kind of dough rest for some hours / days (chilly and covered), because the Potash causes the typical relaxation of the dough in this time.
